@mattgrayyes As a brewer myself, I really enjoyed watching you learn this. My process is the same, just with smaller and slightly cheaper equipment and pretty much no automation.

Maybe twice as much cleaning too :p

Couldn't help but notice that it's only Kölsch if you're actually brewing it in Köln (Cologne, Germany) 😅
Also Reinheitsgebot would apply, but treating the water might just be an exception 🤔
